Abstract

It is shown that the ethanolic extract of the seeds of grapes Vitis vinifera "Lydia" growing in the Donetsk region contain mainly tannins with pyrogallol fragment. Seed oil obtained by extraction, characterized by low output, the presence of impurities (carotenoids, chlorophyll, phospholipids). High value iodine value of the oil allows to predict the content of a significant amount of unsaturated fatty acids, predominantly linoleic acid
