Abstract

The paper identifies the main indicators of quality and safety of sauces based on semi-finished products based on pumpkin puree and sea buckthorn fruits with high content of pectin. It is established that during the established period of storage on microbiological and physico-chemical indicators developed sauces meet the requirements of standards
