Abstract
The quality of milk and vegetable mince based concentrate buttermilk is investigated. The nutritional value of the products developed, the quantitative and qualitative composition of proteins, minerals and vitamins was determined. The amino acid clearance of the test samples is calculated, the degree of digestion and the relative biological value of milk and vegetable mince based concentrate buttermilk
