Abstract
It is noted that the integrated development of the refrigeration industry, the expansion of the use of artificial cold, which ensures long-term preservation and reduction of food losses, is an important task of our time. Therefore, in recent years, much attention has been paid to innovative solutions in the field of refrigeration and long-term storage of fruits and vegetables, ripening of bananas, freezing of products in refrigerated chambers. It is believed that raw fruit is a very vulnerable product and a lot of know-how is needed to keep it fresh, juicy, optimally ripe with preserved vitamins and nutrients. One of the ways to make a reasonable choice of certain solutions associated with solving this problem is to simulate transient modes of refrigerating chamber equipment, air coolers of refrigeration units, refrigeration cycle, and the like. Attention is focused on the fact that mathematical modeling is inextricably linked with CAD — computer-aided design systems, APCS — automated process controlsystem and ACS — automated control system. Therefore, the general task of modeling as a complex system of interconnected elements requires the creation of a mathematical model in which the main elements of this system will be interconnected. A generalized model of automatic control of the modes of a refrigeration unit for storing fruit and vegetable raw materials is considered, containing the main characteristics of the elements of the refrigeration unit, which will allow reproducing the known input parameters (temperature of the refrigerating chamber and cooling the condensing medium, refrigeration capacity of the machine) using the parameters of the operating cycle, and the like. A graph of the relationship between weight loss and visual quality of fruits and vegetables is presented, using the example of strawberries, blueberries, asparagus and peppers for selective experimentation. Analysis of the results showed that the overall quality of raw materials deteriorated during storage as weight loss increased; hardness decreased, which was the most important limiting quality factor for most fruits by which vegetables were judged; changes in color were accompanied by changes in tissue density; the fruit was dark in color and overripe, and the tips of the asparagus developed darkening of the bracts.
