Abstract
It is noted that in today’s conditions automation of technological processes is one of the main conditions for ensuring the competitiveness of the food industry. Therefore, to solve the problem of quality control of raw materials, production must be provided with modern hardware and software, in turn requires constant professional development, the ability to improve technological processes, willingness to apply engineering design methods, as well as free orientation in the documentation available at the enterprise. It is believed that at present the automation of management processes, in particular the process of sorting fruit and vegetable raw materials have not been sufficiently studied as an independent component of CAD TP in the food industry. Optical separation methods are considered, which are widely used for sorting grain and fruit and vegetable products and which can be divided into devices for sorting various types of cereals and berries, as well as devices for sorting vegetables and fruits in the form of separators and more complex conveyor lines. Attention is focused on the fact that the methodology of construction of automated systems of continuous technological control is based on the analysis of many characteristics of the studied object on the conveyor line. Each type of fruit and vegetable raw material has certain special features by which it can always be distinguished from another: certain samples can be traced by some characteristic properties (color, color density, texture, etc.), and other varieties have specific, unique to them signs, such as sugar content and starch index. Depending on these properties and features, a system of analysis and selection of low-quality, deformed samples is formed. Analysis of the properties of fruit and vegetable raw materials and technological parameters of means of operational quality control allowed, given the uncertainty of the characteristics of the object to present the selection criteria in the form of functions of fuzzy sets, namely size (d), weight (m), color (g). Sorting methods have been improved in order to select from the total flow of fruit and vegetable raw materials, the quality of which allows the use of products in industrial production without additional technological operations based on the method of pairwise comparisons
