Abstract
The article examines the development of hotel and restaurant management from the perspective of an evolutionary approach. Identifies the key events that influenced the formation of the modern theory of behavior management personnel.As a result of the conducted researches it is proved that the customer-oriented approach introduction is the urgent necessity for the modern successful existence, as clients are the main value of any company.
