Abstract

This article deals with the analysis and comparison of the scientists’ views, the essence of the concepts “institution” and “institutional environment” is investigated. Author's interpretation of the definition of "institutional environment" is given which offers an understanding of the main directions in development of society as a structure of interconnected rules and relationship management mechanisms; formal and informal norms of the subjects behaviour in economic processes and public policy rules.The role of the institutional environment is formulated in the context of managing the behaviour of hotel and restaurant business personnel, which consists in a system of rules regulating the actions of economic subjects, which sets a certain set of incentives and restrictions, fixing general rules of behaviour with the need to overcome or reduce uncertainty and control the established rules. Recommendations regarding the tools of institutional influence for increasing the efficiency of management processes for the behaviour of hotel and restaurant enterprises are offered.
