Abstract

The modern state of buttermilk processing at the the dairy industry enterprises is shown. Advantages of application of membrane processes (ultrafiltration) in the food industry in the processing of raw milk, as well as issues of development difficulties of membrane processes (ultrafiltration) in the dairy industry are designated. The results of experimental researches of influence of an intensification ways of membrane processing of buttermilk on the performance of ultrafiltration membranes are given. Mathematical models of optimization of technological parameters of semipermeable membranes with application of methods of intensification of the process of ultrafiltration concentrating of buttermilk are constructed. The rational operating parameters of the process of ultrafiltration concentrating of buttermilk in modes of pulsating supply offeedstock and bubbling of buttermilk with gas bubbles in the immedia te vicinity of the membra ne surface are determined. The scientific methodological approach to the use of membrane processes has been improved with the aim of developing technologies for concentrating skim milk products (buttermilk). The obtained results are directed to further research on the determination of rational parameters of the membrane processing of skimmed milk raw materials, which will allow to apply the results obtained in the processing ofsecondary! dairy! raw materials for the needs of the food in dustry
