Abstract
In article some aspects of influence of the institutional environment on management of behavior of personnel of the entities of hotel and restaurant economy are considered. The essence of target approach to personnel development in the sphere of hospitality is disclosed. Foreign experience of institutional transformations is investigated. Institutionalization problems in Ukraine are considered. Organizational aspects of development of the domestic industry of hospitality are determined.
