Abstract

The article analyzes the production of bakery products in Ukraine from 2008 to 2019. It is noted that the process of dough preparation is one of the main and longest stages, which determines the quality of future products. Emphasis is placed on the fact that currently the equipment market offers a wide variety of models of kneading machines, both imported and Ukrainian production. Each of these models must be optimally suited to the technical characteristics for a particular production, both in terms of the type of dough produced and the range of products. For this purpose, a comparative analysis of the technical characteristics of kneading machines (TMM-120, TMM-1M, MTVK-150) was carried out to select the optimal equipment for bread production; the results of the study are interpreted.
