Abstract
The results of the research of the influence of parameters of the process of thermal treatment, the duration of the process of mechanical cleaning, the characteristics of the raw materials on the quality of cleaning of Jerusalem artichoke tubers are presented. Mathematical models of the process of heat treatment of Jerusalem artichoke tubers with steam are obtained. Mathematical models of the process of mechanical cleaning of topinambur are proposed to determine the percentage of topinambur tubers cleaned and the percentage of raw material yield by weight
